Day 23: Lunch — January 26, 2016

Day 23: Lunch

Lunch today is a repeat of yesterday. Kale and quinoa salad with pine nuts, cherry tomatoes and feta, baby carrots, some more tomatoes, and a few sesame thins. Been feeling generally unwell today but maybe this’ll be the worst it’ll get. I’ve been told the Tofutti soy ice cream I was eating is a no no. Fuck this diet.

Day 23: Breakfast

Started feeling not great on the train into work. I’m worried I’m not being restrictive enough with this diet but then on the other hand, I start wondering if the diet’s at all even having any effect on my symptoms. I can see small improvements in some aspects of my stomach life, but the nagging pressure weirdness has yet to fully go away. I woke up this morning feeling great. Truly. Once the day starts though, all hell can break loose.

Breakfast is Mint Green Tea (Twinnings) and dry Corn Chex…

Day 22: Dinner —

Day 22: Dinner

Dinner was amazing. I worked out before dinner and felt really good. I prepped dinner on Sunday. Made stuffed peppers with ground turkey, mint, soy sauce, brown rice, green onion and feta. I put spinach on the side with it and I hated the spinach! Note to self: never buy frozen steamer spinach. Gross.

Watching The Bachelor now and have snacked on sesame thins and some wine. Holla! Feeling okay for now. Maybe a bit weird sitting. As always.

Day 22: Lunch — January 25, 2016

Day 22: Lunch

I have no picture of my lunch because it was so tasty, I gobbled it up. I’m displeased to report that today has been GREAT in some ways, but not great in others. I think it’s safe to say that sitting makes my lower abdomen mad. Something is being irritated by sitting so much and I wish I knew what it was. It’s terrible when I’m at work because there’s not much I can do. Is it my posture? Is there some weird tumor I don’t know about? I doubt it but it’s frustrating not knowing. GI appointment can’t come soon enough.

So lunch! Lunch was a recipe from Valerie Bertinelli of all people…

I made a Kale and Quinoa salad, with pine nuts, cherry tomatoes and feta. The dressing was red wine vinegar, olive oil and black pepper. Doesn’t sound too exciting probably, but I did enjoy it. I also had baby carrots, and my NEW FAVORITE SNACK.

Gratify Sesame Seed pretzels. These are gluten free, and I like them so much more than the Trader Joe’s pretzels if I’m being honest. Here’s a quick picture of the brand itself.

They’ve got a good texture, and a great taste. Excited to add these to my snacking regimen. Tonight I’m going to the gym in efforts to ward off the icky feeling in my stomach. Then it’s Bachelor and scarfing down my pre-made dinner!

Day 22: Breakfast

Day 22 seems like such a long time, but this diet hasn’t been the worst. This is only the beginning of week 4. Have I been at this for almost a month now? Weird. I wish I could say this has been a magical cure-all, but it’s not yet. But I’m hoping that this week shows upward trajectory of ‘feeling better.’

Breakfast was Starbucks Hot Green Tea because I wanted to treat myself, and then I ate plain oatmeal with banana sliced up. Filling!

Day 21 weekend finishing…

Sunday started on a better eating note for me. Time to stop being such a lazy slob with my weekend snow eating habits.

Breakfast was gluten free toast with scrambled eggs on top. I made the scrambled eggs with a touch of dijon mustard and cheddar cheese. Sounds gross, but it was TASTY!

I got a massage for the first time ever on Sunday, which was amazing and relaxing and wonderful. BF got me a gift card at Christmas. Liked it so much, I got a 6 month membership. They gave me green tea upon arrival. I never say no to that.

After the massage, I met BF for lunch at our grocery store. Yes, we do swanky dates. I got California Roll sushi. I wasn’t sure I’d be allowed it because of avocado – but as long as I stay under 1/4 avocado portion size I should be fine. It was so good.

Went grocery shopping for meal prep. Deciding to make some good stuff this week for lunches and dinners, to the tune of stuffed peppers and kale salads

Sunday night found me at my parents’ house. They had hot dogs, so I snagged some Udi’s GF hot dug buns at the store. I decided to toast them on the grill, which made my hot dog feel a lot more fancy. I had some dijon mustard on top, plus potatoes.

I felt generally okay most of the day – I did have some of my discomfort feeling mainly when just SITTING. I spent a lot of my weekend laying down so I guess that makes a bit of sense.

Day 19 & 20 — January 24, 2016

Day 19 & 20

Snowmageddon has turned into snackageddon for me. Since I got released early from work yesterday, it’s been a “not eat real food” kind of weekend. My body may pay for this. Half the time I can’t tell if I’m overdoing it. I wanted to aimlessly eat. Didn’t feel too terrible. Between yesterday and today, I only had one small bout of crampy abdominal pain that passed.

Dinner last night was rice and chicken. Snacks were some wine, some lactose free ice cream, some Fritos, etc.

Today I made a bagel sandwich with a fried egg, bacon, tomato. It was quite good.

I didn’t really eat again until later. Had a banana with Justin’s almond butter. So good. Went to the mall to kill time, then I came home and snacked on some gluten free chocolate chip cookies (only 2), had a bowl of corn Chex with almond milk, and Pinot Grigio. I also had a few macadamia nuts.

I need to chill on eating. I should never be snowed in alone again…

Day 19: Breakfast

I picked up some Gluten Free Corn Chex last night while on the hunt for ice cream. I’m eating them dry for breakfast and they’re quite tasty. I also have a banana, and decided to splurge and get my Starbucks Jade Citrus Mint tea again!

Day 18: Dinner & Dessert —

Day 18: Dinner & Dessert

Last night, my boyfriend cooked. I love those days! He made baked salmon with a little salt and pepper seasoning, white rice and green beans. It was a very healthy meal, and I was left feeling satisfied without being grossly full.

I felt relatively okay last night, not perfect, but not too bad. All the water I was drinking throughout the day finally caught up with me so that made me worry less.

After dinner, we decided we wanted dessert. Dessert on low FODMAP is tricky as hell. I really wanted cheesecake for some reason, but that’s out of the cards right now. We decided to go hunt for lactose free ice cream and I think (hope) I’ve hit the holy grail. I picked up Tofutti’s Better Pecan ice cream. Dairy free, and FODMAP friendly I’m pretty sure. I’m allowed pecans, and tofu, and all that. I tried Googling before I bought but there’s a woeful lack of dessert recommendations that come prepackaged. Everyone says to make your own ice cream. I DON’T HAVE TIME FOR THAT.

Anyway, this Tofutti was shockingly good. Very creamy, very tasty. I limited my intake just in case it is filled with some kind of bad FODMAP thing. All in all though, I’m looking forward to trying more over the weekend. I also picked up Vanilla Almond Bark flavor. There’s cocoa powder, but I’m hoping it’s small amounts.

By 3:30, not feeling as good. Feel bladder pressurey, which makes sense, because for some reason I haven’t gone like at all since early this morning. I’m sucking down water though so… who knows.
